I swear this recipe was not a plan for me to make. It’s that time of the week where I forgot to do grocery shopping due to the workload of Ramadan season. I only have 2 fillets of Salmon and 1 Broccoli. Luckily, I still have a lot of garlic, a tiny bit of honey, and 1 cup of passionfruit syrup left in the pantry. I thought, why not! Let’s make this Seared Salmon with Honey Garlic and Passionfruit Sauce and apparently it’s so good!
My mum even said I have to save and remember this recipe for future reference. I was gonna name it Crispy Skin Salmon but if you watched my Insta Story, you know I had an incident with a dead stove battery. I was unable to make this crispy, but feel free to do so!

I haven’t tried. But I am sure it will work with any fish fillet with skin intact. Or any kind of fish that has the same thick texture as salmon. I wouldn’t recommend Dori or Basa fillet as the texture is way too soft and break easily. Barramundi would be a good substitute for this seared salmon with honey garlic and passionfruit sauce.
What if I don’t have Passionfruit Syrup?
Passionfruit syrup might not as common, it is very common in Indonesia because it’s one of the staples from Medan, Hokkian drinks. But, from the consistency and flavour, we can use real fresh fruit of passionfruit as well. Just don’t forget to get rid of the seeds.
What other protein that we can use for this recipe?
I am 100% sure that this sauce and marination will work well with chicken breast and pork fillet! But, if you are vegetarian, I would say maybe king mushroom or firm tofu. But instead of seared, need to deep fry the mushroom and firm tofu.
Seared Salmon with Honey Garlic & Passionfruit Sauce
Equipment
- Frying Pan
Ingredients
- 2 pcs Salmon Fillet
- 1 pc Broccoli chopped
- 6 cloves Garlic 5 cloves minced + 1 clove sliced for crispy garlic
- 1 tsp Salt & Pepper
- 2 pinch Paprika Powder
The Sauce
- 3 tbsp Water
- 2 tbsp Honey
- 2 tbsp Passionfruit Syrup
Instructions
- Marinate the salmon fillet with salt & pepper and paprika powder – set aside
- Mix the sauce ingredients, stir well – set aside
- Heat up the frying pan with olive oil on low heat. Place the salmon skin-side down, sear it for at least 2 minutes on each side.
- Add mince garlic to the same pan, sauteed slowly until browning
- Pour the mixture sauce into the pan, stir well with the garlic and let the sauce soaked into the salmon. Serve!
- Meanwhile, cook the broccoli according to your taste, you can just steam or stir fry it as the side dish for the salmon
That’s it! As simple as that! I have been cooking a lot of seafood lately because it’s so much easier and well, cow and pig are so cute!
