Mashed Murasaki Sweet Potato with Brown Butter Sage, topped with crispy sage! This recipe was pretty common for sweet potato and normal potato. And, I actually made it accidentally because I needed a food prop for my product photography for Harriet & Co’s new kitchen collection.
I thought normal brown colour potato would look bland alongside with my golden utensils, so I chose sweet potato instead. It turns out, I really like the flavour! It’s sweet, buttery, and savoury at the same time. Especially the aroma of burnt sage! So, why not post it here too! Two birds one stone!
The question is, which sweet potato to choose? You can just use the common sweet potato you can find in your local grocery. Here in Asia, we have a lot of different sweet potatoes that I was even confused by it!
So I grabbed a purple coloured sweet potato and they named it Japanese Sweet Potato here in the supermarket. Did I think, ah it must be Ube? But to my surprised, the inside was white!
After I did some quick research, this was Murasaki Sweet Potato. I should make a post about the information on the variety of sweet potatoes in the world!
Mashed Murasaki Sweet Potato with Brown Butter Sage
Equipment
- Saucepan
- Non-stick Pan
Ingredients
- 1/2 cup Sage Leaf
- 1 pc Murasaki Sweet Potato
- 2 tbsp Olive Oil
- 2 tbsp Salted Butter
Instructions
- Peel sweet potato, cut and dice
- Boil water in a saucepan and add diced sweet potatoes for 15 minutes then drain the water
- Heat up a non-stick pan, add olive oil and butter
- Saute sage leaf until crispy – set aside (1 buttery sage oil + a separate bowl of crispy sage)
- Mash cooked potatoes and add salted butter
- Then add the brown butter sage. Mix well and top with crispy sage

Be careful not to burn the sage. I like to add butter to my mashed potatoes so I did add butter to these sweet potatoes. Taste good! It’s creamy and soft.
I would definitely make this Mashed Murasaki Sweet Potato again next time! I just need to think of which dish to pair because it is quite sweet and aromatic. Especially because I cooked Asian dishes often compared to Western dishes. So maybe meat like Turkey or Pork could be the perfect pairing? What do you think would be a good pair?
