I was supposed to cook Spaghetti Bolognese but my mum dislike tomato sauce, so I decided to make this easy spicy Sichuan beef noodle. It’s pretty much using the same Bolognese ingredients that I have prepared, but minus the Italian seasoning! It’s so easy, I make this using what I have in the pantry.

This recipe would be best using udon, egg noodle, or any kind of rice noodles as well. Personally, I am using spaghetti because it’s what I have. Feel free to change the noodles to your liking to make this easy spicy Sichuan beef noodle.
What if I don’t have Sichuan Chili Oil?
I cheated here cause I have some leftover Sichuan Chili Oil from takeaway food. Shoutout to Super Yumcha for making this delicious Sichuan Chili Oil. The other option is to get Sichuan Peppercorn, roast it on a pan and grind it in the mortar and pestle. If you have a spice grinder, that would be easier too.
How to make Sichuan Chili Oil from scratch?

What kind of sambal are you using?
My go-to sambal is ABC Sambal Bawang Pedas which means it contains garlic and it has extra heat! Best for cooking and as dip for deep frying dish as well.

Spicy Sichuan Beef Noodles

- Frying Pan
- Sauce Pan
Ingredients
- 250 gr Ground Beef
- 1/2 pc Onion sliced
- 3 cloves Garlic minced
- 3 stems Spring Onion chopped
- 300 gr Noodle any kind of noodles
- 2 tbsp Oyster Sauce
- 1 tsp Mushroom Stock
- 2 tbsp Sichuan Chili Oil
- 1/2 tsp Salt
- 1 pinch Black Pepper
- 1 pinch Sesame Seeds
- 1 tbsp Chili Flakes
- 1 tsp Sambal
- 3 tbsp Olive Oil
Instructions
- Boil water for the noodle until cooked – set aside
- Heat up frying pan on high heat, pour olive oil. Stir fry onion until fragrant then add garlic
- Then, add chili flakes. Stir for a while, add ground beef
- Cook the beef mixture until half cooked, then add Sichuan chili oil, stir until fragrant
- Bring the heat to medium, then add cooked noodles
- Add seasoning: mushroom stock, salt, black pepper, oyster sauce, and sambal
- Stir well, lastly add spring onion. Cook until glistening and moist
- Garnish with sesame seeds and fried shallots
If you need more heat, adjust chili flakes, sambal and chili oil accordingly to your taste bud. Good luck!
