The photo probably didn’t do the justice of the taste. But, this Pan-Roasted Cajun Salmon is definitely worth to try! As usual, not a recipe that I planned, just what I have in the pantry and the fridge.

Personally, I think couscous would suit this recipe, and also mashed potato. If you don’t like aromatic baby potatoes with rosemary and thyme, a simple buttery mashed potato would be amazing. I like flavours. So, combining these herbs are good for me. Do what’s best for your palette.
How to know when the salmon is fully cooked?
Salmon will change from translucent (red or raw) to opaque (pink) as it cooks. After 6-8 minutes of cooking, check for doneness, by taking a sharp knife to peek into the thickest part. If the meat is beginning to flake, but still has a little translucency in the middle, it is done. It should not however, look raw.
Always cook pan-roasted cajun salmon or any kind of salmon with low heat. It took me 10-15 minutes for the salmon to be fully cooked.
Does salmon need to be fully cooked?
I would never recommend the consumption of raw or undercooked fish — including salmon — because it may increase your risk of food-borne illness. According to the FDA, salmon should be cooked to an internal temperature of 145°. When working with good quality salmon, we tend to check for doneness with a fork rather than a thermometer. Once the salmon easily flakes with fork, it’s good to go! Just be sure you’re checking the thickest part of the fillet.

I didn’t set my camera with the right setting but I can assure you, the salmon was not burned. The browning was actually delicious from the roasted cajun. To garnish this, I used cherry tomato and some leaf for colour purposes.
Pan-roasted Cajun Salmon
Equipment
- Frying Pan
- Saucepan
Ingredients
- 2 pcs Salmon Fillet
- 400 grams Baby Potatoes Cleaned
- 300 grams Baby Carrots Peeled, Cut
- 2 tbsp Cajun Powder
- 2 tsp Mushroom Stock
- 1 tsp Rosemary
- 1 tsp Thyme
- 1 dash Salt
- 60 grams Butter
- 2 tbsp Cooking Oil
- 1 tsp Garlic Powder
Instructions
- Boil the whole baby potatoes in a saucepan around 10 minutes
- Once it's almost cooked, drain and cut in half
- Season baby potatoes with rosemary, thyme and salt
- Grab frying pan, pour cooking oil, and place baby potatoes skin side up onto the pan
- Lightly pan-roast it until browning – set aside
- Marinate salmon fillet with cajun powder, garlic powder, dash of salt and 1 tsp of mushroom stock
- Heat up frying pan
- Pan-roast the each salmon skin side down with 20 grams butter. (40 grams needed)
- Add another 20 gram of butter to baste the salmon
- Cook until browning with crispy skin – set aside
- Using the same frying pan with a little bit of butter left, add baby carrots
- Add 1 tsp of mushroom stock and a little bit of water
- Cook until browning
- All ready to serve
